Olives

Greek olives are famous all over the world and not without reason, with so many varieties and varieties to choose from. Olives that are soft or crispy, added with either lemon, garlic, salt, wine vinegar, oregano, etc. Greece has approx. 143 million olive trees. At Greek Market, you have the opportunity to taste among others the lovely green olive Amfissa and the famous black kalamon (Kalamata) olive.

Italy, Spain and Greece are the largest exporters of olives. Olive is an oval stone fruit of 1-2.5 cm. The small fruit is green when it is unripe, and changes color from yellow-green to reddish to eventually turn bluish black when fully ripe. The olives are harvested by hand using small wooden sticks (shaped like a large fork) in order not to damage the olives.
The flesh contains approx. 30-60% fat, depending on how ripe the fruit is. The fresh olives contain a glycoside, which makes the fruit bitter. This bitterness can be removed by a fermentation. That is, the selected olives are rinsed clean, placed in a brine where the fermentation is to take place. The fermentation is over after about four months. The olives are then preserved in brine for later use or sale.
