Organic green olives (Amfissa) are large tasty olives with a deep green color. The green olives are lovely firm in the flesh and slightly crunchy. The taste is mild and fresh and is completed by a slightly bitter aftertaste.
The olive harvest traditionally takes place with the hands. This prevents the olives from being damaged. After harvest, the olives are cleaned, selected, and washed. The olives are then categorized by size and placed in closed tanks (only with added water and salt) for fermentation and to get rid of the bitterness in a natural way.
