How to make Greek coffee “Ellinikos Kafes”
- Start by adding water (equivalent to one cup) to the briki, then add the finely ground coffee and sugar to taste, stir and heat slowly.
- When the coffee starts to rise, do not stir any more, be careful not to let it boil, remove it from the hob and let the foam settle. Then put it back on the heat and repeat this process 2 times.
- Then the coffee is ready! Carefully pour the coffee into the cup and leave it for a few minutes to allow the grounds to settle to the bottom of the cup.
- Serve!
- Sip it gently to get the full-bodied aroma of the coffee and to make sure you don’t get too much coffee grounds. Serve with a cool glass of water.
